INGREDIENTS
- 500g low fat pork mince
- 1 large leek
- 80-100g coriander
- 30g cajun spice mix
- 4 wholemeal pittas
- 1 tin sweetcorn
- 10 cherry tomatoes
- 1/2 fresh lemon
- 2 red onions
- Sweet chilli sauce
METHOD
- Heat oven to 180 degrees C. Wash hands thoroughly before starting. Place pork mince in a large bowl with the leeks and coriander finely chopped. Using your hands mix together and form the meatballs in your hands aiming to make 8 meatballs from the ingredients.
- Place each meatball on a cooking tray and place in the oven for 40 minutes at 180 degrees C.
- While the meatballs are cooking prepare your side dish of sweetcorn, chopped tomatoes and red onion. Dice all finely and place in a side dish and squeeze over the juice from the lemon.
- With 5 minutes remaining on the oven carefully remove the meatballs, add a drop of sweet chilli to the top of each and at the same time place your pitta breads and meatballs back in the oven for the last 5 minutes.
- Dish up and tuck in.
