Chicken, Leek & Mushroom Carbonara

INGREDIENTS
- 250g Chicken Breast
- 2 Cups Sliced Leeks
- 2 Cups Sliced Mushrooms
- 2 Large Eggs
- 40g Grated Paremesan
- 100g Wholewheat Pasta
- 1/2 Cup Chopped Parsley
METHOD
- Get a pan of water on the boil seasoned with salt and get your choice of pasta cooking.
- Slice up the chicken breast into strips and add to the pan and fry using fry light spray until coloured. Then add in the sliced leeks and fry until they start to soften and then add in the mushrooms and continue to fry until cooked. Season with salt and pepper to taste.
- Saving some of the pasta water, drain the pasta and add to the pasta to the pan with the chicken and stir in and then take off the heat.
- Beat your 2 eggs in a bowl and add in the grated paremsan and chopped parsley and combine. Add to the pan and continually stir using the residual heat in the pan to cook through the eggs then serve straight away.
