INGREDIENTS
- 150g egg noddles
- 4 spring onions
- 2 large eggs
- 1 small Red onion
- 3 teaspoons of curry powder
- 2 small chicken breast ** How many grams **
METHOD
A yummy homemade Chinese curry noodles but healthy.
- Cook the noodles in a pan following instructions on the packet. Keep a mug of the cooking water.
- Slice the chicken into small strips cook in a frying pan with a drizzle of extra virgin oil and 1 teaspoon of curry powder.
- Once the chicken is cooked slice the spring onion and red onion and add to the chicken and 2 teaspoon of curry powder then beat the two eggs.
- Add the eggs into the pan with the chicken and spring onion keep moving the ingredients around until the egg is cooked then add the noodles cook for a further 2 minutes adding some of the left over cooking water if needed.
